Ingredients
300g The Bare Bird chicken breasts, poached, cooled and diced
1/2 cup good quality egg mayonnaise
2 tbsp sour cream
2 tbsp chopped fresh pistachios (or walnuts)
3 tspn flat leaf parsley, freshly chopped
3 tspn fresh chives, snipped with scissors
softened butter
salt and pepper to taste
12 slices of fresh white toast bread
Method
- Combine the chicken, mayonnaise and herbs in a bowl.
- Mix well to combine and season to taste.
- Butter the bread, trim the crusts.
- Spread the filling over six slices, press down a buttered slice and cut into quarters.
